I love to help others and have been volunteering my time to bring something that I feel is really worthwhile to others and have been doing so since I was a baby. You might wonder how could that be possible. Well, my Mother taught me that giving of ourselves to help others benefits us in the long run. For over 50 years she too has been volunteering in the community bringing 'good news' about God's kingdom to other's.
She spends over 70 hours a month in our community bringing people information from the Bible that actually helps them cope with day to day life. It has helped her health improve in so many ways. Her skin is taking in vitamin-D, she looks great and the exercise is helping her heart and immune system.
Why volunteer? This article sheds some light on the benefits of volunteering and how it helps others (Helping Hands Are Everywhere) written July 22, 2001. Because, of my love for people and because I know that what I am doing will change their life for the better I have expanded my ministry volunteering into my business.

RECIPE CORNER
Marsha's Fish and Chips - Any white fish of your choice, frozen yucca, olive oil, lemon, garlic, yellow mustard, dill, salt.........Prepare the fish by soaking in lemon water for 10 minutes. Use real lemon! Heat the oven to 400 degrees. Rinse your fish pieces and place in a casserole dish with cover. Add 1 inch of water, lemon juice from 1 lemon, pinch of garlic, organic gluten free yellow mustard, sprinkle with dill, drizzle olive oil and spread the mustard around on each piece.
Bake for 25 minutes. I like my fish well cooked.
Yucca Chips - You'll want to start this early in the morning to have ready by dinner time. Get a large stock pot and add your whole bag of frozen yucca. Cover with water about 2 inches from the top of the pot. Add juice from 2 lemons, 1 teaspoon of garlic and bring to a boil.
Boil for 4 to 5 hours. After, 2 hours cut each thick piece in half so it speeds up the cooking time. Keep adding water during the cooking time so that the yucca stays covered in water.
Once you can put a fork in and it is soft they are done! Pre-heat your oven to 350 degrees.
Stage 2 - Place your yucca in a large casserole dish and remove the thick stems that are in the middle using a fork and butter knife. Drizzle with olive oil to cover them well and sprinkle with sea salt. Bake for 15 to 20 minutes or to the desired crunchiness. I like mine semi-crunchy, not too firm and not too soft. You will need to turn half way through to get both sides crunchy.
Dipping sauce - Make a mixture of garlic and olive oil to dip your fish and chips and enjoy!
